Me and Martha



I made The COG a Hummingbird Cake for his birthday. I have been wanting to make it for a long time but I didn't want to have it in the house. The plan is this: we are going to the Cape to see Son of and ride our bikes and then go out for dinner. We will find time for a teeny piece of cake and, then, we'll leave it with Son of to take to work to share, or to eat himself or to feed to coyotes. Either way, we won't have to ignore it.

This is Martha Stewarts recipe - the flower things are sliced dried pineapple. I only did one pineapple worth of them, not the 4 she recommends. It turns out that it would have been better if I'd done at least 2 so the cake was covered with them. But still, I like the way it turned out.

Over 1 million calories per slice, btw.

1 million calories per slice? Shirley you jest! It looks to me no more then around 750,000 calories per slice.

Is this the hummingbird cake that is banana based? I've been wanting to make that for years.

Let us know how good that teeny tiny piece was.

Yes, Vivi, this is the banana, coconut, pineapple, pecan based hummingbird cake. And 1 cup of oil. And frosting with a cup of butter and a pound of cream cheese.

It was good, moist and rich, with a lovely texture from all the above. It was fun to make. Cranky had 2 pieces. I might make it again if the occasion arose.

Honestly, though, I wouldn't eat another piece. If I'm going to use 1,000,000 calories I'd rather have some good cheese with no frosting attached and some nice salty nuts with no cake around them and maybe a banana or some pineapple to wash it down.
