Community Supported Fishery

At today's CSF we got Dabs, five of them. Three meals worth. Dabs are a sort of flounder very common in Ipswich Bay at this time of year. The fisherman told me that if I had ever bought Flounder or ordered Flounder in a restaurant here, what I got was Dab.

I was pleased because I finally got to practice filleting. I was actually pretty good for a first effort. What I didn't do so well was to separate the fillet from the skin - which is weird because that's the part I've done many times with lake fish. At least I was getting better by the 10th fillet.
